Blueberry Recipes

Fire up the barbecue, light the sparklers, invite the neighbors. Celebrate Memorial Day and the Fourth of July-and that there are blueberries and raspberries and blackberries and strawberries in season, sweet and good and dripping with juice. Top the cupcakes with berries, whip up the cream, and have a great time-it's summer.

This recipe is workable with a variety of fruit purees. Each fruit has a different sugar content and requires varying amounts of granulated sugar and lemon juice.

These light waffles would also be good with maple syrup, if you prefer.

This is the best blueberry cheesecake I have ever tried!

Can also make this with Raspberry Sauce or Sundried Tomatoes instead of Blueberry pie filling. Will also cook in the microwave in about 3 minutes. Serve with warm French baguette slices.

Very easy and very good. No one ever knows or suspects that it's gluten free.

Suggested quick topping-Glazed blueberries or blueberry pie filling. The tuna cans are the perfect size and shape for a true miniature single- serving cheese cake. There are many, many variations on this recipe some baked, others not.

This recipe is for a 2 quart freezer. If you half it, it should work very well. 1 serving should not hurt any diet....enjoy...Ray
